Air fryer mistakes: 12 that ruin food, 1 that ruins the basket
Twelve common air fryer mistakes, from skipping preheat to aerosol spray on the basket, with the fix for each and the maker or Consumer Reports source behind it.
Most air fryer mistakes come down to airflow. The machine is a small convection oven with a strong fan, and anything that blocks that air leaves food soggy outside or raw inside. The second group of mistakes does not hurt dinner, it hurts the basket: aerosol spray, metal scrubbers, and a liner left in during preheat. Here are the 12 that come up most in maker manuals, Consumer Reports guidance and Amazon reviews, each with a short fix. Airflow mistakes: cold start, crowding, no shake, foil
1. Skipping the preheat. The manual for the Cosori TurboBlaze 6-Qt puts it plainly: "Food will not cook thoroughly without preheating." Cosori's chart calls for 4 minutes at 345–450°F and 3 minutes at 240–340°F (Cosori TurboBlaze manual). A cold basket eats the first minutes of your timer, so the outside of the food never gets the dry heat that crisps it. Fix: press PREHEAT, or run the empty basket 3–5 minutes at your cooking temperature, then load the food.
2. Packing the basket full. "Crowd the basket and you'll prevent the hot air from reaching all the food, which slows down cooking and could give you uneven and soggy results," Consumer Reports writes, and it suggests no more than three-quarters full when the basket has no max-fill line (Consumer Reports). Cosori adds a safety reason: heaped food can touch the heating coils and become a fire hazard. Fix: one layer, two batches. The second batch cooks faster because the machine is already hot.
3. Never shaking or flipping. The bottom of a pile steams in its own moisture while the top browns. Consumer Reports' advice: "Use tongs or shake the basket during cooking for more even results." The Cosori TurboBlaze has no halfway-flip reminder, so buyers either set a phone timer or forget. Fix: shake loose items (fries, wings, vegetables) at the halfway mark and flip flat pieces like chicken thighs or fish with tongs.
4. Foil over the holes. Foil itself is allowed. Cosori says lining the basket with foil, but not the crisper plate, "may make cleanup easier." The holes in the plate are the whole point of the appliance, though. Cover them and the hot air cannot get under the food, so you get pale bottoms and limp fries. Fix: foil goes in the drawer under the plate to catch drips, or as a small piece under the food with the edges clear of the perforations.
The food-safety mistake and the size mistake
5. Guessing when chicken is done. A browned crust says nothing about the center. The CDC's rule is short: "The only way to tell if food is safely cooked is to use a food thermometer," and all poultry, including ground chicken and turkey, needs to reach 165°F (CDC). Fix: an instant-read probe in the thickest part, away from bone. 6. Buying a machine that is too small. Buyers of the Chefman 4-Qt Compact Air Fryer ($79.99, 4.6 stars, 3,927 ratings on Amazon as of October 2026) describe it as a one- or two-person machine in practice. Consumer Reports makes the same point about the category: most air fryers "aren't big enough to cook for a crowd unless you cook in batches" (Consumer Reports buying guide). Mistakes that ruin the basket: spray, liners, accessories
7. Aerosol cooking spray on the basket. Cosori's manual recommends "oil sprays" for coating food lightly, but it means a refillable mister, not a can. Supermarket aerosol sprays may contain lecithin, an emulsifier that "can actually build up over time onto your cookware" and cover the nonstick surface, along with propellants like propane and butane, according to Tasting Table. Consumer Reports notes that people "have complained on our website and elsewhere that the nonstick coating on some air fryer components flakes off over time" (Consumer Reports). 8. A parchment liner in the basket during preheat. The safety section of Cosori's manual says it outright: "Never put baking or parchment paper into the air fryer without food on top. Air circulation can cause paper to lift and touch heating coils." The Daily Meal reached the same conclusion: preheating with parchment in place "is a potential fire hazard" (The Daily Meal). The Amazon review summary for the Vailnd 8-Inch Square Air Fryer Liners ($9.97, 4.6 stars, 33,797 ratings as of October 2026) counts 513 mentions of fire, usually a liner touching the element. 9. Not reading the accessory's maximum temperature. The TurboBlaze preheats to 450°F. Reynolds rates its parchment paper to 425°F and its purpose-made air fryer liners to only 400°F (Reynolds). Silicone liners, racks and cake pans carry their own printed ratings. Fix: before any accessory goes in, find the number on the box and set the machine below it. If the box has no number, do not use it above 400°F.
Mistakes that ruin the machine: grease, metal, giving up early
10. Letting grease pool under the crisper plate. Cosori: "To avoid excess smoke while cooking, pour out fat drippings after cooking," and pat liquid-marinated foods dry because they "create splatter and excess smoke." White smoke from hot fat is normal; dark smoke means unplug it. Consumer Reports adds that a fryer that is not cleaned properly can "give off excessive smoke or even burn your meal," and tells you to check the heating element for grease. Fix: empty and wash the drawer after every fatty cook, and wipe the cooled element with a damp cloth every few weeks.
11. Scrubbing with metal. "Do not use metal utensils, steel wool, or any other abrasives, because they can scratch or chip the nonstick coating," Consumer Reports writes. Cosori offers a gentler route for stuck-on grease: a paste of 2 tablespoons baking soda and 1 tablespoon water, spread on, left 15 minutes, then washed. 12. Throwing the whole machine out when the coating peels. A flaking basket does not mean a dead machine; the basket is a consumable. Cosori's manual says "additional and replacement accessories are available," and Amazon lists a genuine Cosori replacement basket with ceramic coating for the TurboBlaze DC601 (Amazon). Bottom line
Six of these mistakes are about air: preheat, do not crowd, shake, keep the holes open, buy enough quarts, and use a thermometer instead of guessing.
